Peanut Butter Cup Cookies

I got the recipe from a Quaker Oatmeal Cookbook and let me just say, they are de-lic-ious!!! They are simple, fun to make and taste great!

Ingredients:
1 1/2 cups packed brown sugar
1 cup (2 sticks) margarine or butter, softened
3/4 cup peanut butter (not reduced-fat)
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa power
1 teaspoon baking soda
1/4 teaspoon salt (this is optional)
2 cups Quaker Oats (doesn't have to be Quaker. I use store brand. It's a but cheaper)
1 package (9 ounces) miniature peanut butter cup candies, unwrapped, cut into halves or quarters (about 35 candies)

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, beat peanut butter, brown sugar and margarine until smooth. Add in the eggs and vanilla; beat well.
  3. In a separate bowl, combine flour, salt, baking soda, and cocoa powder; mix well. Add the dry ingredients to the creamed mixture and mix well.
  4. Stir in oats and candy; mix well
  5. Drop 1/4 cups of dough on an ungreased cookie sheet cookie sheet. Space them about 3 inches apart.
  6. Bake for 12 to 24 minutes or until the cookies are slightly firm to the touch. (Try not to over bake them)
  7. Cool for 1 minute on cookie sheets and then transfer to a wire rack; cool completely. Store in in a container.


Makes 36 Cookies. Nutritional information for 1 cookie:
Calories: 190 (calories from fat 100). Total fat: 11 grams, Saturated fat: 3.5 grams, Cholesterol: 10mg, Sodium: 150mg, Carbohydrates: 21 grams, Dietary fiber: 2 grams, Protein: 4 grams

  8. I make these also! I can't remember where I got the recipe but I make them in the small squares pan. It has like a dozen squares. Don't really know the proper name for it!
