Wake up to a hearty and healthy breakfast with Pompeian Olive Oil

I was given a wonderful opportunity from Smiley360 to try Pompeian Olive Oil. I've tried other products in the past from Pompeian, but I've never tried their olive oil. The kit came with:
  • 24 oz bottle of Pompeian Extra Virgin Olive Oil
  • Retractable measuring spoon
  • A $10 Walmart Gift Card to buy additional ingredients
  • Recipe card
My mission was to come up with a recipe or two that included the Pompeian olive oil. To be honest, I had a hard time trying to figure out what I wanted to do and what to make. I've thought about making a dinner, but that's to common. No offense, but there are so many recipes out there for dinner. I decided I would do a simple breakfast. 

Like I said, this is a simple breakfast. Anyone can make this whether you are a chef or just an amateur cook. Ingredients needed for this breakfast are:
  • Pompeian Olive Oil
  • Eggs (doesn't matter how many you use)
  • 1 large onion
  • Mushrooms
  • Half or whole Green Pepper
  • Idaho Potatoes
  • Sea Salt (for taste)
  • Italian Seasoning
  • Garlic Cloves
  • Garlic Power (this is optional. You can use this as a replacement to the garlic cloves)
Once you have everything together, chop the onions (separate into two piles), mushrooms, garlic (mince), potatoes (bite sized pieces) and green pepper. Chopping everything ahead of time makes it a lot easier on you when you are cooking. When everything is chopped, you can start your first dish. The first dish is Pan Fried Potatoes.


Ingredients:
2 Tablespoons Pompeian Olive Oil
6 Idaho Potaoes / chopped
3 Garlic Cloves / minced 
Chopped onions
Sea Salt (for flavor)
1 teaspoon Italian Seasoning
Directions:
  1. Heat your pan to medium-high heat. Add one tablespoon of olive oil and let heat. 
  2. Once olive oil is heated, add the garlic, onions and a pinch of salt. Saute the onions and garlic for a few minutes or until the onions become golden. 
  3. After onions and garlic have been sauteed, add the potatoes, a pinch of salt, Italian Seasoning and 1 tablespoon of olive oil.
  4. When potatoes become soft, let them sit in the pan over the heat for a couple minutes without being touched. Letting the potatoes sit in the pan will get them to crisp and this is what you want! After a couple minutes, do a quick stir and let them sit again. Repeat this step until potatoes are nice and crispy. 

Ooo-la-la! Look at those delicious potatoes! The next recipe is called Veggie Scramble.


Ingredients:
1 Tablespoon Pompeian Olive Oil
9 Eggs (seems like a lot, but feeding a family of five... Well, we know how that can be, lol. Use as many eggs as you like. You don't have to use 9 eggs!)
Chopped Onions
Chopped Green Peppers
Chopped Mushrooms
Sea Salt
1 teaspoon Italian Seasoning
1 Tablespoon of Milk


Directions:
  1. Heat your pan to medium-high heat. Add one tablespoon of olive oil and let heat.
  2. Once oil is heated, add the onions, green pepper and a dash of salt. Cook until pepper becomes soft and onions turn golden. 
  3. Add in the mushrooms along with another dash of salt. Adding salt into your food little by little brings out the flavor of each ingredient making it stand out more. Saute mushrooms until they begin to change color and soften. Don't over cook them because they will be cooking more with the eggs.
  4. In a large bowl, break eggs and add milk. Whisk the two ingredients until well blended.
  5. Pour egg mixture into your pan along with a dash of salt and Italian seasoning. 
  6. Stir until eggs are fully cooked.

 And here is the finished dish. I know it's not much of a breakfast, but everyone enjoyed it.


I'd have to say the kids went crazy over the potatoes. I mean come on, who doesn't love fried potatoes? The Pompeian Olive Oil made this dish not only tasty, but healthy as well. The reason why I say that is because I am so used to cooking my eggs in butter and the moment I made them with the olive oil, it just made them so much lighter. It's a healthier alternative and it makes your dish taste great!

    1. Never combined olive oil with canola oil before. Sounds like an interesting combination. I've combined butter and olive oil and that is a delicious combination. Olive oil also comes in handy for other things other than cooking as well.

  3. Never cooked breakfast with Olive Oil before so I'm going to have to try that. I bet my husband would love those Pan Fried Potato's. As for me, I think I'd like the Veggie Scramble the best. Thanks for sharing those recipes. :)
