Amazing Baked Cod served next to a Mixed Green Salad infused with Balsamic Vinaigrette and Feta Cheese

Amazing Baked Cod

Ingredients:
4 tablespoons butter
1/2 cup Italian style bread crumbs
1 pound thick-cut cod
1/2 lemon, juiced
1/4 cup dry white wine or white cooking wine
1/2 teaspoon garlic powder

Directions:
  1. Preheat oven to 400 degrees F. (200 degrees C.)
  2. Place 2 tablespoons of butter in a microwave safe bowl and microwave for about 30 seconds, or until melted. Stir in bread crumbs and garlic powder until evenly coated.
  3. In a 7x11 or a 9x13 inch baking dish, add the remaining butter in pan. Place pan in preheated oven and melt butter; About 1 to 3 minutes. 
  4. Remove pan from oven and coat the cod in butter. Optional: add a pinch of salt and pepper to fish
  5. Bake cod in the oven for about 10 to 15 minutes. Remove from oven and top with lemon juice, wine, and bread crumbs. Place fish back in the oven for about 10 more minutes or until fish becomes opaque and flakes easily with fork. Optional: Garnish with fresh parsley and lemon slices

Salad with Balsamic Vinaigrette 
and Feta Cheese

Ingredients:
1/3 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1/4 teaspoon ground mustard
1/4 teaspoon garlic powder
pinch of salt
Feta cheese
Mix of your favorite greens

Directions:
  1. In a bowl, add olive oil, balsamic vinegar, lemon juice, ground mustard, garlic powder and salt and whisk ingredients
  2. Toss a few table spoons of dressing over your favorite greens and garnish with feta cheese

    1. Birdie, this recipe is by far my favorite for fish. It taste great with cod and tilapia. I would suggest using Sauvignon Blanc wine in this recipe. It adds a hint of sweetness and it taste amazing!

    1. You can try other cheeses as well. I think a few shreds of Parmesan would taste good.

  4. This looks so good!!! We are trying to eat better in 2015 (and that includes more fish and chicken). And this recipe looks like a great way to start.

    1. It would definitely be a great way to start. I love using this recipe for any white fish and honestly, I think it taste a heck of a lot better with white wine rather than the cooking wine.

  6. I haven't had a nice piece of thick cod in years - oh my does look good, and making it look like a fish is so cute! could even get picky kids to dive in! I'd love to try this recipe!

    1. You know, my kids, when I made this recipe went crazy over it. I love how the wine brings out more flavor in the dish and boy does it taste delicious!
